Beet Merlin Seeds are specially selected for their sweet, tender flesh, making them ideal for roasting to perfection. These dark ruby-red, globe-shaped beets have a high sugar content and maintain their excellent flavor without becoming woody, even when fully mature. Plant in early spring after the risk of frost has passed, sowing seeds 1 inch apart and 1/2 inch deep in well-worked, fertile soil. Thin seedlings to 3-4 inches apart as they grow to ensure the beets have enough space to mature. For the best results, sow before midsummer heat and again in early fall for a second harvest. Harvest beets when they reach several inches in diameter, then wash, wrap in foil, and roast in a 350°F oven for at least an hour until tender.
